Fragrant broken rice consists of rice grains that break during the milling and polishing process. Although the grains are uneven, they still provide abundant nutrition because the germ remains intact. Besides Vietnam, countries such as Thailand, Bangladesh, and various other regions in Southeast Asia also consume broken rice for different purposes, including cooking, animal feed, producing flour for laundry and cooking, as well as use in the leather and cosmetics industries. High-quality broken rice has an opaque white color when cooked, the rice is dry, soft, fluffy, naturally sweet, and remains tasty even when cooled.
