BLACK GLUTINOUS RICE
Black Glutinous Rice is healthy food. It is also known as black sticky rice, which is the unpolished, whole grain of traditional sticky white rice, commonly served in Asian restaurants, especially Thai. Despite its name, the color of the rice is closer to a deep, dark purple. Like its white counterpart, glutinous black rice has sticky individual grains and can be used in sweet and savory Asian dishes. Glutinous black rice can be purchased in Asian grocery stores, and natural or health food stores.

2) Benefits:
The ancient Chinese believed that eating it helped improve the kidneys, stomach, and liver, so it became a favorite of the aristocracy. For centuries, sticky rice with charcoal is recommended for the following reasons:
• Nutritious
The characteristic color of this rice comes from anthocyanin, the same plant pigment that gives blueberries a rich color. Anthocyanin is a powerful antioxidant that has many benefits for the heart and brain. Compared to white rice, sticky rice also has more protein and phytochemical detoxification.
• Less sugar
This rice is considered to be low in sugar. For this reason, it is considered a healthier option for diabetics.
• Lots of fiber
Fiber performs various roles in the body. The digestive system cannot fully digest, so it becomes food for friendly bacteria in the gut. It also slows down the metabolism of sugar, preventing a spike in blood sugar that causes type 2 diabetes. It also helps people to feel full longer. That is why the sticky rice of coal helps support weight loss. In a study, published in the journal Food Medicine, performed in animals, researchers demonstrated that this rice supplement could inhibit fat accumulation in the liver. Thereby, the researchers concluded that charcoal sticky rice has an anti-obesity effect because of its ability to reduce the accumulation and promote fat breakdown. Black Glutinous Rice is quite rare in Vietnam, so the price is also much higher than other types of sticky rice and is a healthy food that is popular with many people.
3) How To Cook Black Rice In A Rice Cooker:
• Ingredients
- 1 cup black rice
- 1 and 3/4 cups water or stock plus more water for rinsing
- Salt
• Instructions
- Prepare the rice
- Add the rice to a large bowl – preferably metal or glass, so that it doesn’t stain. Add warm water until the rice is completely covered, and use your hands to mix around and generally agitate the rice. You will notice the water quickly becoming dark purple in color.
- Strain the water out of the bowl – I recommend using a mesh sieve so that you don’t lose any rice kernels. Repeat the process 4 more times of filling the bowl with water, agitating the rice, and straining out the water. This is important for removing excess starch from the black rice so that it cooks properly in the rice cooker.
- Drain the rice, and add it to your rice cooker. Add water or stock at a ratio of 1 and 3/4 cups per cup of black rice.
- If your rice cooker has a brown rice mode, start it. Otherwise, set the timer to 25 minutes.
- When the timer goes off, remove the lid to release excess steam.
- Cooked black rice can be stored in the refrigerator for up to 5-7 days.
