2. Detailed description:
- Ripasso wine is a traditional wine of Verona region produced by a very old method called "Ripasso". This technique involves the production of Valpolicella at the end of the fermentation process of Recioto. Wine becomes warm and mature. In Ripasso wine there is the freshness of Valpolicella, the rich of chocolate, cherries and raisins.
- Grape varieties and vineyards: 80% of Corvina Veronese grapes, 10% of Merlot grapes and 5% of Rondinella grapes, vines planted in line with Guyot technology. Density of planting 5,000 vines/ ha.
- Production area: Valpatena hills and Valpolicella Classica area which have limestone soil rich of iron.
- Production: Grapes are harvested by hand in late September and then fermented in shallow steel barrels at a temperature of 20-22 C degrees within 2 weeks. The second fermentation process "Ripasso" takes place in March.
- Flavor: The wine has dark purple red color, with strong aroma of ripe red fruits. The smooth taste balances between acidity and acrid.
- Usage: Ripasso wine can be easily combined with different Italian foods like pasta, baked dishes, red meat and cheese, etc.
